Aloha Links Guava Bars

What's the best way to start off the week? This has been a question asked for ages, is it a morning walk, a quick workout, a cup of tea and a hour of meditation? We say sometimes it's simple, sometimes it's Dessert!!!


Ingredients:

Crust

  • 1-3/4 cup all purpose flour

  • 1 cup powdered sugar

  • 1 cup softened salted butter

  • 1/4 tsp vanilla extract

Guava Filling

  • 1 cup guava puree The Perfect Puree

  • 3/4 cup white sugar

  • Juice of 1 large lemon

  • 3 large eggs

  • 3 tablespoons all purpose flour

  • 1/4 tsp salt


Step 1.

Preheat oven to 350 degrees, place oven rack on middle track.

Line a 9 x 13 baking pan with parchment paper


Step 2.

Prepare the crust by combining the flour, butter, sugar, and vanilla in a large a bowl. Use a hand mixer to bring ingredients together, crust should look loose and crumbly.


Step 3.

Pour crust into 9" x 13" parchment-lined baking dish and lightly spread mixture into an even layer. Lightly press into corners and place in oven, bake at 350 for 15 minutes .Do not fully cook crust--it will be placed back in to finish cooking with filling.


Step 4.

While the crust is in the oven, mix together the guava puree, juice from the lemon, sugar, salt, eggs and flour. Place mixture in refrigerator until crust is done. Once the crust has finished pre-baking, pour filling mixture over crust. Place back into oven for another 15-20 minutes or until filling is solid and longer loose. Remove from oven and let cool for 30 minutes, then place in refrigerator for an additional 2-3 hours.


When ready to serve, cut into 2" x 4" bars and dust with confectioners sugar before serving.
